Our initial involvement with this project was to prepare a feasibility study for a potential site suitable for the new delicatessen. The chosen site was then divided into operational and customer areas. There is a private operational area located at the rear of the store that includes a commercial kitchen, dry store, cold room storage and office space. An internal brick wall divides the private and public areas of the delicatessen. The wall also provides acoustic control between the front and rear spaces.
The public spaces of the store include the staff operational areas for food processing, coffee and food displays and customer areas for dining and retail displays. A curving plywood bulkhead, similar to a sausage being extruded during production or the outside curving edge of a cured meat, separates the operational and customer zones in the shopfront and draws customers into the coffee and food display areas. The window seating area provides customers with a visual outlook to the street
A textural palette of polished concrete, plywood timber, recycled timber, ceramic tile and stainless steel provide a warm and homely atmosphere whilst maintaining a food premises environment.
